Method

Heat 1-2 tablespoons of oil in a pan and cook scrambled eggs until half-cooked and runny. Set aside in a bowl.
Add 1 tablespoon of oil to the same pan and sauté garlic until fragrant. Add diced tomatoes and stir-fry until mushy.
Return scrambled eggs to the pan with tomatoes.
Pour in the mixed sauce (soy sauce, sugar, ketchup, oyster sauce, and cornstarch mixture). Mix everything for 1-2 minutes.
Optionally splash a tablespoon of sesame oil for a nutty-aromatic finish and serve.
