Ingredients: 1 kg oxtail or pork hock; 1/2 cup peanut butter; 1/4 cup toasted rice flour (for thickening); 2 tbsp annatto seeds (soaked in 1/2 cup warm water); 1 eggplant (sliced); 1 bunch string beans (sitaw); 1 bok choy; 1 onion (chopped); 4 cloves garlic (chopped); Bagoong alamang (shrimp paste for serving)

Rich Filipino oxtail stew simmered in a creamy peanut sauce and served with savory bagoong.

Method

Boil oxtail in water for 1.5 to 2 hours until tender, reserving broth.
Sauté garlic and onion in a large pot.
Add cooked oxtail, 2 cups broth, strained annatto water, and peanut butter, stirring until smooth.
Thicken sauce by mixing toasted rice flour with broth and stirring into the stew.
Steam eggplant, string beans, and bok choy separately or simmer in stew during last 5 minutes.
Serve hot accompanied by sauteed bagoong alamang.
